Indian Street Food (Buttery Bread and Spicy Mixed Veggies)

*You will need a pressure cooker for this recipe or an instant pot to pressure cook the veggies
Ingredients
-3 potatoes
-1 cup cauliflower (I like to use frozen)
-1/2 cup peas and carrots (I like to use frozen)
-1/2 green bell pepper (you can use any color)
-1 yellow onion
-2 tbsp ginger garlic paste
-2 tbsp tomato paste
-2 tbsp butter
-2-3 tbsp pav bhaji masala (found at your local Indian store)
-1-2 tsp Kashmiri Red Chili powder (can add more or less depending on your spice level)
-1/2 tsp turmeric
-½ tsp garam masala
-1/4 tsp brown sugar
-1/2 tbsp salt, add more if needed to taste
-Cilantro to garnish
-Bread buns
Instructions
- Place all vegetables except the onion into a pressure cooker, add 1-2 cups water so that veggies are immersed. Cook for 2 whistles.
*If using an instant pot add veggies except the onion into the pot and secure the lid and set the pressure release to sealing. Press the Cancel button to reset the cooking program, then select the Pressure Cook or Manual setting and set the cooking time for 6 minutes at high pressure. Perform a quick release by moving the Pressure Release to Venting. Open the pot.
2. Once the veggies have been cooked, mash them with a potato masher. Add in a little water if needed, you want it to be slightly watery and mashed
3. In a frying pan heat the butter and add in ginger garlic paste and saute for about 4 min.
4. Next add in the diced onion and saute until translucent, add in the turmeric and red chili powder
5. Add in the tomato paste, pav bhaji masala and garam masala and let sauce cook for 3 min stirring occasionally. If you prefer more spice, add in extra pav bhaji masala and garam masala to taste.
6. Add in mashed vegetables to sauce and stir
7. Add in salt and sugar, adjust to taste
8. Top with cilantro and lime wedge
9. In a separate pan spread butter on bread buns and toast bread on pan until crispy. You can also sprinkle cumin powder onto bread if you desire.
10. Serve immediately and enjoy!
Tips
-Serve with additional onions on top
-Add in more red chili powder or chopped chili pepper if you desire
