Roasted Red Pepper Tortellini and Herb Potatoes

Roasted Red Pepper Tortellini

Ingredients for Garlic butter sauce

-1/2 stick of salted butter

-dried seasonings of your choice (I like Italian seasoning, basil, oregano and parsley)

-3-4 Cloves of garlic minced

-1 small shallot thinly sliced

-A dash of garlic salt

Ingredients for Tortellini

-3 cups tortellini (Any flavor of your choice)

-Water to cook according to package

– 1 red pepper

-Olive oil

-Salt

Instructions

  1. Pre heat oven to 450 deg
  2. Cut red pepper in half and remove the seed and stems
  3. Lay red pepper cut side down on aluminum foil on a baking tray. Brush olive oil on the red pepper
  4. Bake for 15-20 min until the skin becomes dark and the pepper begin to sink
  5. Let red pepper cool before you peel off the dark skin. Dice or slice roasted red pepper and set aside.
  6. Soften garlic butter and add in all dried spices (as much as you want!), garlic salt and mix until ingredients are well combined.
  7. Boil Tortellini according to package, when draining be sure to save about 1 cup of pasta water and set aside.
  8. In a large frying pan using medium heat, drizzle some olive oil, add in the sliced shallots and cook until translucent.
  9. Next, add in the minced garlic and cook on medium heat for 5 min, try not to let the garlic become golden brown.
  10. Add in the herbed butter mix and let it melt, next slowly add in the reserved 1 cup of pasta water, I like to add it in small increments so the sauce doesn’t become too watery. I usually end up using 1/2 to 3/4 of the water.
  11. Add in cooked tortellini and mix. Let sauce and tortellini simmer for about 5 min, mixing occasionally. If you like your tortellini on the crispy side then cook for a little longer until the bottoms are golden brown, about an extra 10 min.
  12. Add in the roasted red peppers, sprinkle salt to taste and top with fresh parmesan.

Tips

  1. If you add too much pasta water, let the extra water boil off and sauce will slowly thicken

Herb Potatoes

Ingredients

-2 potatoes washed

-2-3 tbsp Olive Oil

-Hand full of fresh herbs chopped

-Dried herbs of your choice

-Salt to taste

Instructions

  1. Wash and dice the potatoes, you don’t need to skin them.
  2. In a large frying pan  on medium low heat drizzle some olive oil, place the potatoes and add in the rest of the olive oil.
  3. Sprinkle the dried herbs and salt onto the potatoes and mix well until the potatoes are all coated in seasoning and olive oil.
  4. Cover the pan and cook potatoes for about 15-20 min, stirring often, if your potatoes are sticking to the pan too much add in some more olive oil or a few tablespoons of water.
  5. Use a knife to check if the potatoes are cooked (knife will slide through the potato easily)
  6. Add in the fresh herbs and cook uncovered for another 5 min until potatoes are crispy and brown.
  7. Serve and enjoy!
