Ingredients for Pineapple/avocado base
-1 fresh pineapple cut into rings or canned pineapple rings
-1 ripe Avocado sliced
Instructions:
- Grill the pineapple rings and top with avocado slices, and homemade mango salsa.
Ingredients for salsa
-2 ripe mangos, diced
-1/2 red onion finely diced (or you can chop it in a food processor)
-1 tomato finely diced
-1/2 cup cilantro chopped
-1 jalapeno finely diced (or chopped in a food processor)
-2-3 tbs lime or lemon juice
-1/4 tsp salt
-2 large cloves of garlic minced (or chopped in a food processor)
Instructions for salsa
- Combine all ingredients into a bowl and mix.
- Add in extra salt or chili powder to taste if needed
Tips:
- If you prefer a more blended salsa you can always put all the ingredients except the mango into a food processor, then add in the diced mango.
- If you prefer your salsa to be on the sweeter side you can also add in diced peaches!
- You can also top it with feta cheese
