Grilled Pineapple topped with Mango Salsa

Ingredients for Pineapple/avocado base

-1 fresh pineapple cut into rings or canned pineapple rings

-1 ripe Avocado sliced

Instructions:

  1. Grill the pineapple rings and top with avocado slices, and homemade mango salsa.

Ingredients for salsa

-2 ripe mangos, diced

-1/2 red onion finely diced (or you can chop it in a food processor)

-1 tomato finely diced

-1/2 cup cilantro chopped

-1 jalapeno finely diced (or chopped in a food processor)

-2-3 tbs lime or lemon juice

-1/4 tsp salt

-2 large cloves of garlic minced (or chopped in a food processor)

Instructions for salsa

  1. Combine all ingredients into a bowl and mix.
  2. Add in extra salt or chili powder to taste if needed

Tips:

  1. If you prefer a more blended salsa you can always put all the ingredients except the mango into a food processor, then add in the diced mango.
  2. If you prefer your salsa to be on the sweeter side you can also add in diced peaches!
  3. You can also top it with feta cheese
