Ingredients
-Egg roll wrappers at room temp, store bought (this recipe makes about 8-10 rolls)
-2 cups shredded carrots
-2 cups shredded cabbage (purple and green)
-2 scallions/green onions chopped
-1 tbs of garlic and ginger paste (optional)
– 1-2 tbs Dark Soy sauce (this ones sweeter but you can use regular too)
-1/2 tbs Chili garlic sauce
-1/4 tbs Siracha
-Salt to taste
-Sweet and sour sauce for dipping
Instructions
- In a frying pan on medium heat add in some oil and saute the shredded carrots, cabbage, green onions and ginger/garlic for 3-4 min
- Add in the soy sauce, chili garlic sauce, siracha and salt to taste. You can always add in more sauces if you prefer the stuffing to be spicier, but try not to make the stuffing too wet.
- Continue to saute for another 5 min, then remove from heat
- Take an eggroll wrapper and place about 2-3 spoons of mixture in the center, fold according to package directions
- Place rolls in air fryer at 375 degrees for 7-8 min, then flip them and cook for another 5 min
- Serve with a side of sweet and sour sauce and enjoy!
Tips
-Substitute the shredded veggies with store bought pre shredded cole slaw mix to cut down on prep time
-Spray or lightly brush with olive oil to get them crispier in the air fryer
