Cream Cheese Linguine

Cream cheese pasta with a side of Arugula salad

This quick pasta dish takes less than 30 min to make! Pair it with some salad and garlic bread and enjoy!

Ingredients for pasta

-3 tomatoes, diced

-1/2 package cream cheese cubed and room temp

-1/2 cup olive oil

-1/3 cup fresh basil (dried works too!)

-2-3 cloves garlic minced

-1 tsp salt, and extra to taste

-1 tsp pepper

-1 pack (9oz) linguine

-1/4 cup pine nuts toasted (optional)

-Shaved Parmesan cheese to top (optional)

Instructions for pasta

  1. Toss tomatoes in a bowl with olive oil, minced garlic, salt and pepper and set aside
  2. Boil Linguine according to package directions
  3. In a small frying pan without any oil add in the pine nuts and cook on medium heat, mixing/stirring occasionally. Roast until they are golden brown and immediately transfer to a bowl and set aside.
  4. Once linguine is ready, drain it and without rinsing place back into pan on medium heat. Add in the cream cheese and stir until the cheese has melted (this might require a lot of stirring, but it will get there I promise!)
  5. Once pasta and cream cheese have combined add in the tomato and olive oil mix and stir to combine all ingredients
  6. If you think the pasta sauce is too thick you can drizzle in some more olive oil and then add in the basil
  7. Add in the pine nuts, salt to taste and top with Parmesan and enjoy!

Arugula Salad

Ingredients

  • ½ a box of grape tomatoes, diced in half
  • ½ bag of arugula (you can also use mixed greens with arugula)
  • Handful of feta cheese (you can use shredded Parmesan too, or even fresh mozzarella!)
  • Balsamic vinegar

Instructions for salad

  1. Toss all ingredients into a bowl and drizzle with dressing and serve immediately
