Scrambled Egg, Cheese and Veggie Wrap

Ingredients

-2 Eggs

-Handful of shredded cheese

-Seasonings (salt, pepper, garlic powder, onion powder, paprika)

-1 tortilla

-Hot sauce (optional)

Veggies of your choice sautéed, we used

-Diced bell peppers

-Diced mushrooms

-Diced onions

-Half a bag of spinach

Instructions

  1. Finely chop or dice your veggies (except spinach) and saute them on medium heat, once they begin to soften add in your spices. Once mixed, pour mix into bowl and set aside.
  2. Add half a bag of spinach into the pan and saute for a few min until quantity shrinks, then set aside.
  3. In a small bowl whisk up 2 eggs and add in a dash of salt and pepper. Pour the egg mixture into frying pan on med heat and scramble the eggs.
  4. Add in veggies and spinach once the eggs are half cooked/ half liquidy
  5. Stir until eggs are cooked and ingredients are combined.
  6. In a separate frying pan heat tortilla, you can also spread butter and hot sauce on it and let it become slightly crispy. Once heated, set aside.
  7. Place egg and veggie mix onto center of tortilla, add in a handful of shredded cheese of your choice, wrap and enjoy!

Tips:

  1. If you prefer your cheese to be completely melted then you can add it to the egg mixture while the eggs and veggies are being combined
  2. Throw in some jalapenos if you like your wraps spicy
  3. Wrap these up like a burrito and refrigerate for another morning or eat it on the go!
