Quinoa Stuffed Avocados

Ingredients

– quinoa cooked according to package

-1/4 tsp garlic powder

-1/4 tsp cayenne or paprika

-1/4 tsp onion powder

-salt and pepper to taste

-2 ripe avocados, seeded and peeled and cut in half

–1/2 bell pepper diced

-1/2 cucumber diced

-1 tomato diced

-1/4 red onion diced

-1 scallion diced

-1/2 cup feta or any cheese of your choice  (optional)

-Cilantro to garnish (optional)

-Siracha mayo or Chipotle sauce

Instructions:

  1. Cook quinoa according to package directions, when cooked, fluff with a fork and add in all dried seasonings, salt and pepper to taste.
  2. Mix in diced peppers, cucumbers, tomatoes, and red onions, and combine with quinoa.
  3. Fill each avocado half with quinoa mixture and top with cilantro, scallions and feta
  4. Drizzle on siracha mayo or chipotle sauce
  5. Serve and enjoy!

Tips

  1. You can slice the bottom of the avocado to level it to make it easier to stand on its own
  2. Any type and flavor of quinoa works for this recipe
