Ingredients
– quinoa cooked according to package
-1/4 tsp garlic powder
-1/4 tsp cayenne or paprika
-1/4 tsp onion powder
-salt and pepper to taste
-2 ripe avocados, seeded and peeled and cut in half
–1/2 bell pepper diced
-1/2 cucumber diced
-1 tomato diced
-1/4 red onion diced
-1 scallion diced
-1/2 cup feta or any cheese of your choice (optional)
-Cilantro to garnish (optional)
-Siracha mayo or Chipotle sauce
Instructions:
- Cook quinoa according to package directions, when cooked, fluff with a fork and add in all dried seasonings, salt and pepper to taste.
- Mix in diced peppers, cucumbers, tomatoes, and red onions, and combine with quinoa.
- Fill each avocado half with quinoa mixture and top with cilantro, scallions and feta
- Drizzle on siracha mayo or chipotle sauce
- Serve and enjoy!
Tips
- You can slice the bottom of the avocado to level it to make it easier to stand on its own
- Any type and flavor of quinoa works for this recipe
