Ingredients
-Taco sized corn tortillas
-2 eggs, scrambled or fried
-Potatoes diced
-Seasonings of your choice (I used Italian seasonings, salt, chili powder)
-Olive oil or canola oil
-1 tomato diced
-Shredded cheese of your choice
-Cilantro chopped
-Chipotle sauce or spicy mayo
Instructions
- In a pan drizzle some oil and add in the diced potatoes
- Add in your spices and herbs of your choice, stir and cover pan with lid and let potatoes cook, stirring occasionally.
- Potatoes are cooked when a knife slides through it easily, should be about 15 min.
- In a separate pan make scrambled eggs, season with salt and pepper and set aside
- Heat tortilla on frying pan until golden brown spots appear
- Stuff tortilla with potatoes, tomatoes, eggs, cheese and top with cilantro and sauce.
