Ingredients

-Taco sized corn tortillas

-2 eggs, scrambled or fried

-Potatoes diced

-Seasonings of your choice (I used Italian seasonings, salt, chili powder)

-Olive oil or canola oil

-1 tomato diced

-Shredded cheese of your choice

-Cilantro chopped

-Chipotle sauce or spicy mayo

Instructions

  1. In a pan drizzle some oil and add in the diced potatoes
  2. Add in your spices and herbs of your choice, stir and cover pan with lid and let potatoes cook, stirring occasionally.
  3. Potatoes are cooked when a knife slides through it easily, should be about 15 min.
  4. In a separate pan make scrambled eggs, season with salt and pepper and set aside
  5. Heat tortilla on frying pan until golden brown spots appear
  6. Stuff tortilla with potatoes, tomatoes, eggs, cheese and top with cilantro and sauce.
  7. Enjoy!
