Thai Peanut Noodles

These pad thai inspired peanut noodles are delicious and easy to make and come together in less than 30 min! Perfect way to satisfy that thai food craving!

Ingredients

Noodles

-1 8oz pack pad thai rice noodles

– 4 scallions chopped

-2 tbsp vegetable oil

-3 cloves garlic minced

-2 handfulls of thai basil

-crushed peanuts and lime wedge to top (optional)

Sauce

-4 tbsp dark soy sauce

-2 tbsp soy sauce

-2 tbsp vegetarian oyster sauce or mushroom soy sauce

-1 tbsp siracha or chilli garlic paste

-1 tbsp brown sugar

-1 tsp Maple syrup

-1 tbsp creamy peanut butter

Instructions for the sauce

Mix all sauces into a large bowl and stir/whisk in peanut butter until creamy and well blended *I prefer tasting the sauce at this point to make sure I don’t need to add more of anything according to my liking

Instructions for noodles

  1. Cook the rice noodles in a pot of hot water according to package. Once cooked, set aside in cold water.
  2. Heat the vegetable oil in a large pan on medium heat. Add the garlic and cook for 1 minute, then add the scallions and half the sauce and let it simmer.
  3. Add the drained noodles to the pan and toss the ingredients together and cook for 2 minutes, then add the remaining sauce
  4. Reduce the heat to medium and add Thai basil leaves while mixing everything together.
  5. Lastly top with crushed peanuts, crushed red pepper flakes and a lime wedge. Serve immediately.

Notes:

This is a vegan friendly recipe, but you can always make some additions!

  1. Add in an egg: Crack an egg in the pan after adding in the scallions and mix to scramble before adding in the noodles.
  2. If you don’t have thai basil on hand then you can use regular Basil, but thai basil will give you that extra flavor
  3. Add in extra siracha or crushed red pepper into the sauce mix to add some extra spice
